Description

Carbonera is a hot paste made from Chipotle, jalapeño which has been dried and wood-smoked, together with tomato and Caribbean cocoa, combined with Amontillado sherry and a little thyme. This might be an interpretation of Mexican Mole with a few Andalusian touches but is unquestionably one of Salsas Quietud’s most full-bodied sauces.
